Farro with Broccoli and Cauliflower Print

Serves 4

  1. In medium saucepan bring water to a boil. Stir in farro. Cook, partially covered, over medium heat, stirring occasionally, until farro is almost tender, 25-30 minutes. Add broccoli and cauliflower and cook until farro and vegetables are tender, 5 minutes longer. Drain and return to the saucepan. Drizzle with olive oil and Parmesan.
  • 4 cups water
  • 1 cup Zursun farro
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. Parmesan cheese
