Lupini Bean Snack Print

Instructions
  1. Sort beans and soak overnight in bowl using 3 times as much water as beans. The next morning rinse beans thoroughly with cool water and drain. In large pot, cover beans with several inches of fresh water. Bring to boil, reduce heat and simmer, leaving lid slightly ajar, for one hour. Drain beans and rinse well.
  2. Pack beans in jars and cover with salted water (about 1 tablespoon per quart of water). Refrigerate. Repeat this process; draining and adding fresh salted water, every day for 5 days, or until the soaking brine is no longer bitter. Beans will keep for weeks, covered with lightly salted water and refrigerated. To serve as a snack, drain desired quantity of beans, and drizzle with olive oil and sprinkle with black pepper.
