Green Lentil and Rice Pilaf Print

Serves 6

  1. Sort and rinse lentils with cool water and drain. In medium saucepan, add lentils, chicken broth and water, and bring to boil. Reduce heat to simmer and cook for 5 minutes. Add rice and salt, and simmer, covered, until all liquid has been absorbed (about 25-30 minutes).
  2. In small fry pan heat oil. Add onion and sauté for 3 minutes. Add tomatoes and simmer for 10 minutes. When lentil and rice mixture is done, remove from heat and add tomato mixture and pepper. Mix gently using two forks.
  • 1 cup Large Green lentils
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup raw white rice
  • salt and pepper to taste
  • ½ onion, chopped
  • ¼ cup olive oil
  • 2 fresh tomatoes, chopped
